Viscosity Reduction

Starch Liquefaction

Saccharification

Reduce slurry viscosity before liquefaction through the degradation of cell wall polysaccharides and gums present in cereals. Specialized xylanase, hemicellulase, and cellulase systems improve mash handling, mixing efficiency, and process performance.

During high-temperature processing, starch granules absorb water and gelatinize, forming a highly viscous mash. Alpha-amylase enzymes hydrolyze starch macromolecules into lower-molecular-weight dextrins, reducing viscosity and creating optimal conditions for downstream saccharification.

Following liquefaction, glucoamylase enzymes convert dextrins into glucose through enzymatic hydrolysis. Efficient saccharification maximizes fermentable sugar production and supports higher ethanol yields.
